The Best Banana Bread Muffin Recipe

There is nothing quite like waking up before the kiddos, cleaning the house, all while a good batch of banana bread is in the oven.

I love this recipe because adding sugar is completely optional, and taste amazing either way.

If you would like this recipe to have a sweetness to it, and not use sugar, I encourage you to use 1/3 cup of honey or sweetener of choice! I always add vanilla and cinnamon for flavour, especially when not adding sugar!

Let’s dive into the recipe!

Ingredients:

  • 1 large carrot, or 2 small carrots

  • 1 cup white or brown sugar
    (this is 100% optional, and it turns out and taste great either way! I personally will use 1/3 cup of honey to replace the sugar.)

  • 3 large ripe + mashed bananas

  • 1 egg

  • 1/4 cup (melted) between the following choices: butter, coconut oil, olive oil, or margarine

  • 1/2 tsp of salt

  • 1 3/4 cups of flour (I use unbleached)

  • 1/2 tsp of baking powder

  • 1 tsp of baking soda

  • 1 tbsp cinnamon

  • 1 tbsp vanilla extract

  • 1 cup chocolate chips (optional)

Instructions:

  1. Mix together: banana, sugar, vanilla, cinnamon, and shredded carrot thoroughly.

  2. Add in melted oil or butter of choice. Mix until combined.

  3. Add in the egg and mix well.

  4. Then add all dry ingredients, but do NOT over mix.

  5. Bake at 350F for 45 minute- 1 hour for a loaf or 20-25 minutes for muffins. Make sure you line or grease your loaf or muffin pans. It should be golden brown and a tooth pick should come out clean!


We swear by this recipe! I make multiple batches and freeze for easy on the go snacks, prepping for another baby in the house, or to deliver to a mama with a new baby.
